Shelf Life Prediction and Kinetics of Quality Changes in Pineapple (Ananas comosus) Varieties at Different Storage Temperatures

Shelf life estimation is an important factor to predict the freshness of fruits. This study aimed investigate shelf and changes in physicochemical properties three different pineapple varieties, namely MD2, Josapine, Morris stored at 5, 10, 25 °C. The effect storage temperature on total soluble solids, pH, moisture content, firmness, colour was evaluated for 21 days period. It revealed that temperatures have a significant quality varieties. firmness content showed high regression coefficients, hence were used prediction based kinetic models. By using first-order kinetics, coefficient determination (R2) values pineapples ranged from 0.893 0.992. results also demonstrated samples 10 °C had longest relation fruit. findings indicated plays role improve preservation fresh fruits vegetables during storage.
